Ingredients: spinach(fresh or frozen)approx 200g
2 bay leaves
1 cinnamon stick (optional)
2-3 garlic cloves(optional)
2-3 tsp oil
cumin seeds
Onion paste( 1 big onion)
tomato puree( 1 tomato)
Ginger-garlic paste
2-3 green chillies
turmeric powder
corriander powder
garam masala
1 tsp kasoori methi leaves
cubes of paneer(you can use half a slab of Nanak paneer)
Salt (as per taste)
Recipe :
Firstly,get the spinach blanched.Blanche it in little water for abt 2-3 min.Retain the water.
Allow it to cool down a bit and then grind the spinach and green chillies.(here if you like,you can
add some garlic cloves)
Take a pan and heat the oil.Let the bay leaves get fried for a while,then add Cumin seeds.
Put the onion paste into it.Saute the onion paste and add the ginger-garlic paste.
After the paste leaves the raw smell,we add turmeric,corriander powder and garam masala.
Let these ingredients get sauted nicely till the oil leaves the sides.
We now add the spinach in to the mixture.Here we also add the retained water which was used to
blanche the spinach(By doing this we are retaining its nutritional value)
We can now add the kasoori methi leaves.
Let the spinach cook for about 7-10 minutes.
Lastly add the cut cubes of paneer.(here i have not fried the paneer.its optional)
Our Palak Paneer is now ready to be served with rotis or naan!
